Coffees from the Yirgacheffe region are well-loved for their truly unique flavors. The heirloom varieties that grow there have 99% more genetic material in them than the rest of the world, and the exotic flavors found in these heirloom varieties shine. Ethiopia has a long and storied history with coffee; coffee is enjoyed in a ceremonial preparation, roasted in a pan and brewed by the senior woman in the household in a pot called a jebena. The process itself is takes about an hour, and it’s a routine part of hospitality in the home. This complex preparation of coffee in the home echoes the care that coffee is grown and processed with in Ethiopia, and it’s not surprising that some of the most beautiful coffees come from this region. The moment we tasted this lot we knew it was the one. Beautiful tropical fruit flavors shine with a soft jasmine florality that doesn’t overwhelm and balanced with a sweet lemonade crispness. It’s an incredibly delicate coffee and one perfect for sharing with others.

NOTES ON BREWING

This coffee is pretty darn malleable, with lots of tropical fruit notes and tons of sweetness. It’s a fairly delicate coffee though, and it benefits from a slightly larger ratio to accentuate and balance out its acidity.
